How do you photoshop an image, but keep the original colors in sum parts?

some pictures I've seen have been grayscaled, but the eyes are still blue or the shoes are still the original color as they started with, how do you do that?? PLEASE HELP

How do you photoshop an image, but keep the original colors in sum parts?
No need to use Grayscale, go to Image → Adjustments → Hue/Saturation, adjust the saturation to -100.





Then you can use the History Brush.
